Vegan Ice Cream Sandwiches – Cookbook Review & Giveaway!

What goes better with summertime weather than ice cream sandwiches? Unfortunately, it can be hard to find safe and healthy treats for kids who have food allergies, or kids who follow a special diet. I recently got my hands on this brand new cookbook, Vegan Ice Cream Sandwiches, which features 60 recipes for delicious dairy-free ice creams and cookies, and I was excited to review it – especially for my fellow autism mamas, since so many of our kiddos are gluten and/or dairy-free.

I’ll admit to being a little sketchy on the notion of vegan ice cream, but after flipping through the book, I quickly saw that most of the recipes use a cashew, soy, or coconut milk base in the ice creams and cookies – yum! I ended up modifying a recipe for cranberry ice cream (we used cherries, since they’re in season and my kids love them) paired with gingersnap cookies.

The cookies came together beautifully, as you can see.

But this wouldn’t be a review without making the ice cream, right? So let’s get started. All the ingredients were easy to find at my local supermarket.

The part that seemed to take the longest was letting it cool before I poured it into the ice cream maker! I borrowed my friend Laura‘s ice cream maker, and it is super cool. I’ve got one on my wish list now!

Here it is, churning away! Making ice cream is pretty much a new thing for me, so I found this wildly entertaining. Also I think the heat is getting to me. Anyway, I enjoyed watching this thing spin!

And here are my finished ice cream sandwiches! They didn’t get as freezy as I wanted them to, but I think that was more of a “Laura has no patience” issue than a problem with the recipe. BELIEVE ME, the kids didn’t seem to mind.

Honestly, I’m kicking myself for not just biting the bullet and making the peanut butter cup ice cream like I originally planned! That’ll be the next one!

    I’m a huge summer fruit junkie!! I adore palisade peaches above all things followed closely by bing cherries and watermelon . We used to make homemade peach ice cream at my grandmothers house with everyone taking turns turning the crank! Ahh the good old days :)

      Looooove Palisade Peaches! I’m considering driving out to the western slope just to bring home a bunch. Love the ice cream memory; you sound like that Blue Bell commercial – haha!

      That sounds so good! I saw a pin on Pinterest about making popsicles with fruit and coconut water. So yummy.

      Us too! Fun fact: I grew up a couple of miles from Rocky Ford, Colorado, also known as (I am not kidding) The Watermelon Capital of the World. They were our rival high school and their mascot was the Meloneer. (Again, I am not kidding.) During football games, this giant pickle-looking creature (actually a watermelon) would run around with the cheerleaders. Ah, the weirdness of small-town life.

      That sounds soooo good. All this talk about peaches inspired me to buy a big thing of them at Costco yesterday. Those will hold me over until the Palisade peaches start rolling in!

    Have to say that sometimes nothing cools me down like a big bowl of fruit salad! But vegan icecream is ALWAYS welcome :D
